Gather around because I’ve got a tasty treat that’s sure to satisfy your cravings – gluten-free pizza muffins!

Savor the irresistible golden brown gluten free English muffin topped with layers of savory marinara sauce, gooey melted cheese and your favorite toppings.

Pizza muffins are a delicious lunchtime meal recipe or a quick afternoon snack that our family has always enjoyed. Since going gluten free, we’ve continued to make this family favorite on gluten free English muffins.

Fond memories of Joan’s Gluten-Free Great Bakes

I originally published the recipe here over 10 years ago. But life has a way of throwing unexpected twists, and ours came in the form of Joan’s Gluten-Free Great Bakes closing its doors. It’s nostalgic to reminisce about those days, especially since Joan herself once left a heartwarming comment, sharing how she developed her English muffins specifically for English Muffin pizza.

No doubt, we miss the presence of Joan’s Great Bakes in the gluten-free community.

Suddenly, our go-to English muffins vanished, leaving us adrift in a sea of uncertainty.

But fear not, because where there’s a will, there’s a way! We found some substitutes to keep our pizza muffin tradition alive. So, if you’re looking for a delicious treat, trust me, these pizza muffins will hit the spot.

Speaking of pizza – the ultimate comfort food that brings joy with every bite. Whether it’s a casual Friday night dinner or a weekend gathering with friends, pizza is always an easy favorite. And guess what? Being gluten-free doesn’t mean missing out on the pizza party!

Now, let’s talk low-carb recipe options because, let’s face it, sometimes we want to indulge without the guilt. John and I are all about finding creative ways to enjoy our favorite foods while keeping it low-carb. So, I’ve come up with a few recipes that are sure to satisfy those pizza cravings without the carb overload.

From pizza on zucchini: Mouthwatering Stuffed Zucchini Boats to delicious protein-packed One-Pan Chicken Pizza and even a Cheese Lover’s Zucchini Casserole, there’s something for every pizza aficionado. Okay. It’s time to return to the kitchen and take a peek at the simple steps to creating the irresistible gluten-free pizza muffins.

Alright, so first things first, crank up that oven to 400℉.

Next up, let’s deal with those frozen gluten free English muffins. You can either zap them in the microwave for a bit or just let them hang out on the counter until they’re defrosted. Once they’re ready, grab a fork and split those babies open. Then, pop ’em in the toaster until they’re all nice and golden.

Now, onto the baking sheet they go! Lay out those toasted English muffin halves so they’re all ready for their toppings.

Time to get saucy! Grab a spoon and dollop some pizza sauce onto each muffin half.

Now comes the fun part – the cheese! Sprinkle it generously over the saucy muffins until they’re all covered in cheesy goodness.

Now, here’s where you can get creative. Add whatever toppings you prefer. I’m all about a slice of tomato and a sprinkle of basil on a couple of mine, but feel free to mix it up! The other two have some pepperoni or whatever else you like.

Last but not least, into the oven they go! Bake ’em up for about 3 minutes, just until that cheese gets all melty and irresistible.

Gluten Free Pizza Muffins

Ingredients

  • 2 gluten free English muffins
  • 4 heaping tablespoons sauce recipe or if you prefer store bought Muir Glen is good
  • 1 cup mozzarella cheese shredded

Toppings

  • 1 tomato sliced
  • basil to sprinkle on the tomato pizza muffins
  • 3 slices of pepperoni for each pepperoni pizza muffin
  • parmesan cheese grated

Instructions

  • Preheat oven to 400℉.
  • Defrost frozen English muffins in your microwave or on the counter. Split each muffin with a fork and toast until golden.
    2 gluten free English muffins
  • Arrange toasted English muffin halves on a baking sheet.
  • Spoon pizza sauce onto each half.
    4 heaping tablespoons sauce
  • Top with cheese.
    1 cup mozzarella cheese
  • Add your favorite toppings. I topped two of our halves with a slice of tomato and a sprinkling of basil. The other two I topped with pepperoni.

  • Bake for about 3 minutes until the cheese melts.
  • Take the pizza muffins out of the oven and sprinkle them with parmesan cheese.

    Do you have a good gluten-free english muffin that you recommend? Generally I find the gluten-free baked goods to be underwhelming.

      Yes, try Joan’s. If you just want a plain English muffin with butter, they even have those “nooks and crannies” to melt your butter in. They taste good toasted and don’t have any back taste. I’d love to hear what you think when you try them.

    These look great! I have always loved english muffin pizzas! And I would bet that the flavor of the toppings helps balance out the gluten-free muffin.

    You did a great job with these English Muffins ! This is exactly why I developed the recipe. When my Grandsons were in the 3rd grade, their class was making English Muffin Pizza and they had to have gluten free ones . This is a wonderful recipe that kids have always enjoyed. Of course, they are the absolute best on a Joans English muffin.
