Don't even get me started. I have celiac disease. I know someone who says she "had" celiac disease, but that she could eat ancient grains (including wheat) when she did. She no longer has it, apparently. I said, once, that she hadn't had celiac disease but likely something else then, but it's honestly not worth ruining the friendship over so I just try to avoid the subject now.

I also watched a movie recently where one of the characters said that "vegans" eat "gluten free." I had to put down the remote because I was afraid that I might throw it through the television screen if I didn't. This was not that old a movie (the characters had smartphones in it), so I can't understand why the writers would have incorporated something so ignorant into the storyline, It could have all been prevented by them doing a few minutes of research to be sure that what they were saying made sense.

I'll stop here because I don't want to turn this into a whining session. So much of the misinformation out there makes our lives harder than they need to be. It's the information age, people; look it up!

It happened to me with pastas. Certified gluten free by the french celiac association (below 20ppm) - I live in France. I was SO sick I couldn't even end up the dinner. I even had mouth sores!!! I went on their website (when I felt better days later), and learnt that they also process wheat products. But it is "ancient wheat". Lol. The fad says that ancient wheat is better... ahahah IT IS STILL GLUTEN IT IS STILL POISON!!!!. What a joke ! I can't even cook in a glutened kitchen (I get sick even with a loooot of work to avoid cross contaminations), so how can they say that their products are gluten free if they process them in an industry containing gluten?! Never again!

[…] The enchiladas came out wonderfully with the Mission Tortillas, but I decided to see if I could find certified gluten free corn tortillas as well for those of us worried about cross-contamination. We wrote about this here. […]

Hi Donna.
Thank you for your comments. Since those with wheat allergies have many of the same symptoms as those with celiac disease, GF labeling has been a tremendous help to them. My daughter, who has a wheat allergy, but not celiac disease, is now quite conscious to check product labels for wheat.

Hi Michelle. For we who have celiac disease, the avoidance of cross contamination is a non-negotiable. I guess we have to grow our own food to be absolutely sure of where it comes from. We do that in the summer.

Quite true. As the study showed even certified gluten free products can be contaminated. I guess we have to rely on our experience and then hope for the best.
