Hi Jane, I’m glad you enjoyed the post. Thanks for taking time to share with us. The life of a celiac is a real journey, isn’t it? I don’t eat a lot of grain products anymore. I found I gained too much weight and my digestive track does a lot better without them. My kids eat Tinkyada GF pasta. They seem to enjoy it. But then again they never had homemade pasta so their reference point is kind of limited. We’re still searching for a good bread, too. We use either Udi’s or one from a local GF bakery. They really like Against the Grain rolls and Joan’s bagels. We’re fortunate enough to have a local pizzeria that offers GF pizza. It’s made in dedicated pans. Nicole loves it. I hope you do well in your journey.

This is a fabulous post, I can relate to so much of this. I remember the relief of finally figuring out what was causing my symptoms. Then the panic of no bread or pasta! I did finally find a pasta that I enjoy (Barilla). Still in search of a good bread, and I love Frescheta's gluten free pizza!

Hi K. Lee, thanks for taking the time to comment. I hope your daughter is doing well since being diagnosed with celiac. I’m curious as to why your daughters suggested you go GF. Have you felt better since going GF? It took me a while to feel better.

Hello Alana, Thank you for your kind comments concerning Barbara’s recipes. I can independently verify that they are truly delicious. LOL. It’s true that there are many more options for those on a gluten free diet and this makes the transition so much easier. By the way I really enjoy your ACW posts. Have you seen our https://historicalspotlight.com website? It’s a work in progress.

Thank you for this excellent post! My youngest daughter was also diagnosed with Celiac's a couple of years ago. I've learned a lot from her about eating GF myself. She and my oldest daughter, whose career involves natural health, have encouraged me to also try the GF lifestyle for awhile to see if it helps relieve many health issues I deal with (asthma, arthritis, hypothyroidism, among other things). I have been mostly GF since July 19 (a lapse here or there, like a slice of pizza once and egg rolls another time).

Years ago (it must have been nearly 20 years ago) I experimented with gluten free for my son. At that time there were few products for that lifestyle - I remember the struggle of trying to find food - and my son was so unhappy. In his case, the diet didn't seem to work. But I know people who have adopted the diet. Thankfully, there are a lot of mainstream solutions now, although those who need the diet still need to be so very careful. I love your wife's recipes, incidentally.
