Sometimes the best recipes are the simplest ones. The ones that require only a handful of fresh ingredients to make a dish that is elegant and tasty and, yet, so effortless to prepare. I’ve added bacon to many of my vegetable dishes, but I think with asparagus I have finally found the perfect match.

Sweet Potato Noodles with “Cream” Sauce
Sweet potato noodles are an easy delicious side dish to make with your spiralizer. The winter has been so long and cold here in New York that some days I’d rather curl up on the couch with a hot bowl of soup than venture outside. But this week the weather has been warming up ever so…

Quinoa and Sausage Stuffed Peppers (Gluten Free)
A new year is all about trying new things. When I saw these large and beautifully colorful bell peppers at the local supermarket, I knew I had to use them for a recipe here on the blog. I realized that I’ve never made stuffed peppers before, and honestly I don’t know why it has taken me so long.
Baked Zucchini Sticks
My husband John is visiting the blog today to share a recipe we made this weekend. Enjoy! Fried mozzarella sticks, fried zucchini sticks, potato skins. I remember back to the days when I was in college, before I knew I had gluten sensitivity. My friends and I would head to the local watering hole after a basketball game or a workout and order up mounds of pub food. Boy, that food was delicious.

Caramelized shallots, roasted sweet potatoes, mushrooms and chopped garlic cloves are sprinkled with fresh parsley in this delectable holiday treat. I’m looking forward to serving this up as one of the vegetable side dishes at my family’s Christmas dinner.

Roasted Potatoes
These are the easiest and best roasted potatoes: crispy on the outside and fluffy inside. Enjoy! One day last week, we awoke early and started to prepare a hearty breakfast, in anticipation of a busy day ahead.
