Skinny Low Carb Taco Bowls

Ingredients

  • For spicy beef:
  • 1 pound grass-fed ground beef
  • 2 cloves garlic minced
  • 1/2 cup water
  • 1/2 tablespoon oregano
  • 1/2 tablespoon paprika
  • 1/2 tablespoon ground coriander
  • ½ teaspoon cumin
  • 1 teaspoons chili powder
  • 1 tablespoon Bragg's apple cider vinegar
  • 1/2 teaspoon salt
  • For guacamole:
  • 2 avocado
  • 2 large garlic cloves
  • juice from half of a lime
  • 1 1/2 teaspoons salt
  • 2 tablespoons fresh cilantro leaves or 1 teaspoon dried cilantro leaves
  • diced tomatoes optional
  • ____________________________________________
  • 1/2 cup of Salsa homemade or store bought
  • 2 cups of spinach
  • 1 cup broccoli sprouts
  • 1 cup tomatoes diced

Instructions

  • For spicy beef: Brown ground beef with garlic in a skillet. Then drain the grease. Add water.and spices. Cook until all the flavors have blended together. Finally, splash with vinegar and stir.
  • For guacamole: First peel and mash avocados with a fork in a large bowl. Then whisk together with chopped garlic cloves, fresh squeezed lime juice, chopped cilantro, tomatoes. and salt.
  • For each bowl: Spoon a quarter of the spicy beef into each bowl. Then, add 2 tablespoons of guacamole, 1/2 cup spinach, 1/4 cup sprouts, 1/4 cup diced tomatoes, and 2 tablespoons of salsa to each bowl. Serve with lime wedges and enjoy.
