Creamy Cauliflower Mash
You can make mashed cauliflower taste just like mashed potatoes. Promise. I think you’re going to love this low-carb recipe.⠀
- 1 head of cauliflower
- 2 tablespoons butter
- 1 1/2 teaspoons salt
- dash of pepper
- ¼ cup of half and half
Steam cauliflower florets until tender, about 10 minutes.
Then drain and place in the bowl of your food processor fitted with the large chopping blade.
Add half and half, butter, salt and a dash of pepper. Process until fluffy and enjoy.
- If you want your cauliflower more creamy, add a little more half-and-half.
- Serve as a side dish or as a topping for this super low-carb cottage pie!
