Treat yourself to a refreshing dish of zesty lemon posset, a simple creamy delight for any occasion! Only three ingredients and completely gluten free, egg free, and nut free.
1teaspoonlemon zest + 5 tablespoons of fresh-squeezed lemon juice
Instructions
In a medium saucepan, bring cream and sugar to a boil over medium-high heat. Stir constantly until the sugar completely dissolves.Once boiling, reduce the heat to simmer to maintain a gentle boil so the mixture does not boil over. Continue stirring constantly for about 3 minutes as the mixture thickens slightly.
1 pint heavy cream, 1/2 cup granulated sugar
Remove the saucepan from the heat and stir in the zest and lemon juice so the flavors infuse into the creamy mixture. Let the mixture sit for about 10 minutes to cool slightly.
1 teaspoon lemon zest + 5 tablespoons of fresh-squeezed lemon juice
Stir the posset mixture again to ensure it's well combined. Using a fine mesh strainer, filter out the lemon zest to ensure a smooth texture in the final dish. Now carefully pour or spoon the mixture (I use my ice cream scoop; it's less messy) into six individual ramekins (or any 4-ounce dessert dishes) ensuring each one gets a generous portion.
Cover each ramekin with plastic wrap or lids and transfer them to the refrigerator. Let them chill for at least 1 hour, or preferably overnight, until the possets are fully set.Serve and enjoy!
Notes
Traditionally, lemon is used for its bright acidity, which balances the richness of the cream. However, you can experiment with other citrus fruits like lime or even orange to create different flavor profiles.
While classic posset is flavored with citrus, you can infuse it with vanilla, lavender, or even spices like cardamom or cinnamon for a unique twist.
Posset is delightful on its own, but you can garnish it with a sprig of mint, fresh berries or a fruit compote to add some contrasting flavors and textures.
This recipe can easily be doubled or tripled by using the slider in the recipe card.
Keep the possets in the refrigerator. They are best enjoyed within 2-3 days of making.
