Whisk the milk, eggs, extra-virgin olive oil, vanilla, and salt, nutmeg, and cinnamon together in a shallow dish. Soak your favorite gluten free bread in mixture for a few seconds until saturated.

Now generously grease your griddle or skillet with butter, about 1 tablespoon, over a medium heat until hot, but not smoking.

Cook your soaked bread for about 3-4 minutes on each side until golden brown. You want a nice soft center with slightly crisp edges. Wipe you griddle after every batch and use fresh butter so that your butter doesn't burn.
Serve hot with maple syrup. Enjoy!

Leftover French toast can typically be stored in the refrigerator for 2 to 3 days. Just be sure to place it in an airtight container to help maintain its freshness. Reheat in the toaster.
To keep for a longer time, flash freeze them: arrange each piece of cooked and cooled French toast on a baking sheet in a single layer and place in the freezer for about 30 minutes to harden and semi-freeze. Then transfer to a freezer safe bag or container and store up to 3 months.
