Hearty Gluten Free Chicken Noodle Soup in the Slow Cooker

Here's an easy traditional chicken noodle soup recipe for you. It's made from a whole chicken. It simmers in your slow cooker (or on the stove), filling the house with its healing aroma.

Instructions
Add chicken to a slow cooker or dutch oven and cover with water. Add vinegar. Then add celery, carrots, onion and whole cloves. Cover and set the slow cooker on low for 6 hours.If you're cooking in a dutch oven on the stove, bring to a boil. Skim off any fat that rises to the top. Reduce heat, cover and simmer for 6 hours.
8 cups water, 1 whole organic chicken including the neck, 1 tablespoon of apple cider vinegar, 2 stalks of celery, 2 carrots, 1 1/2 teaspoon salt, 1/4 teaspoon pepper, 1 onion, 3 whole cloves
About an hour before you are ready to serve, remove the chicken from the pot. Discard the skin and neck. Then carefully separate the meat from the bones and discard the bones. Cut up the meat into bite size pieces and return it to the pot. Add garlic, parsley and thyme. Simmer until you are ready to serve.
The gluten free Tagliatelle noodles I use are from Le Asolane. I have also used Schar or Jovial Foods and they mimic real egg noodles. You can choose your favorite type of noodles.
For this recipe, please cook the amount of noodles needed according to your preference or the number of servings you plan to prepare. Customize to your desired portion size.
Organic chicken is super good, but not mandatory for this recipe. I do think organic chicken has an even sweeter scent.
Customize your soup with extra vegetables to suit your taste like peas or mushrooms.
If you make your soup a day ahead, it can be chilled and the solidified fat can be lifted off. Separate the soup into jars, leaving at least an inch of space at the top of each jar, and store the jars in the refrigerator. According to USDA, your soup will keep in the fridge for up to 3-4 days.
You can also store it a lot longer in the freezer and use it weeks later. However, be careful to use freezer safe containers as jars can sometimes break due to the expansion that happens when food is frozen.
