Combine ground beef, breadcrumbs, and minced onions in a large bowl. Also, season the mixture with salt and pepper. Then add your beaten egg to the meat mixture and mix thoroughly.
2 pounds of ground beef, ½ cup of onion, 1/2 cup gluten free bread crumbs, 1 egg, 1 teaspoon of salt, a dash of pepper
Line the bottom drip pan of a broiler pan with foil or parchment paper.
Form the meat mixture into a loaf shape on the slotted upper part of the broiler pan.
Bake for 1 ¼ hours.
Spread ketchup over the top of the meatloaf and bake for 15 minutes more.

Let meatloaf rest for 5 minutes before removing from pan to slice and serve.

Today, I have Aleia's gluten free Italian breadcrumbs. I have also used Schar's. You could also go with panko breadcrumbs. I like Ian's original or Italian seasoned.
Leftovers will keep in an airtight container in the fridge for 4 days
You can freeze your meatloaf in an airtight container for up to 3 months. Let the meat cool down before placing it in the container.
