Melt butter in a 3 quart saucepan. Cook your onions on low for about 30 minutes until they're golden and caramelized for a real flavor boost.

Divide soup into 4 broiler-proof soup bowls. Float one slice of toasted baguette bread in each bowl and top with 2 slices of swiss cheese, a tablespoon of grated mozzarella cheese, grated parmesan cheese, and a dash of paprika.
Position your oven rack 6-inches from the broiler heat source.Then pre-heat broiler on high for 5 minutes.Arrange bowls on a broiler-safe pan. Broil for 4-5 minutes to melt the cheese.
