Adding vegetables like potatoes, carrots, and onions to the slow cooker along with the brisket can infuse them with delicious flavor and create a complete meal in one pot. I do this in my absolutely delicious slow cooker pot roast recipe. How do I know when the brisket is done cooking? The brisket is done cooking when it's fork-tender.
