Surówka is a traditional Polish sauerkraut salad made with fermented cabbage, carrots, and apple. Unlike many cabbage salads that rely on mayonnaise-based dressings, this version gets its flavor from tangy sauerkraut and fresh produce.
This authentic recipe was shared with us by Polish friends, it’s a simple, crunchy side dish that pairs well with everything from weeknight dinners to summer barbecues.
Our friends from Poland shared their Surówka recipe with us. Pronounced suˈrufka, it’s a sauerkraut, carrot, apple and onion salad.
Especially, they said, that it’s delicious with fish recipes.
However, I was planning to serve pork tenderloin tonight and just couldn’t wait to try it. And boy, it’s yummy. I had to share it with you.
This is a raw salad so there’s no cooking involved. Let me show you how to make it.
Ingredients
This salad comes together with just a few ingredients: crunchy sauerkraut, a carrot, an apple, and half of an onion, fresh parsley, and a dressing made with extra-virgin olive oil, sweetener, salt and pepper.

Tasty surówka is an easy, nutritious, raw side dish that’s delicious with dinner. But I also can picture serving it at a summer party picnic or barbecue.
Whether you’re serving surówka alongside grilled meats or fish at a barbecue or adding it to a picnic spread, finish the meal with something light and refreshing, like my simple creamy lemon posset or my friend’s mango sago recipe.
Pro tips and recipe notes
- If you do serve your surówka with fish, our friends said to add the juice of two fresh lemons.
- Also, I substituted their recommended tablespoon of sugar with Stevia.
- Fermented sauerkraut is so nutritious. And it’s easy to make your own sauerkraut. For store bought, I recommend Bubbies Of San Francisco Sauerkraut. It has live cultures, and no sugar, vinegar or preservatives. Just great taste.
- I had delicious apples on hand when I made this recipe. A tart Granny Smith, Honeycrisp, or Macintosh apple would stand up well to the flavor of the sauerkraut.
- Leftovers will keep in an air tight container in the fridge for a week.

Gluten Free Surówka Recipe
Ingredients
- 1 pound Sauerkraut
- 1 carrot shredded
- 1 apple chopped
- 1/2 onion minced
- 1 tablespoon parsley
- 2 tablespoons extra-virgin olive oil
- 1-2 g Stevia
- salt to taste
- dash of pepper
Instructions
- Strain liquid from the sauerkraut.1 pound Sauerkraut
- Add carrot, apple, onion, and parsley to your sauerkraut in a large bowl. Stir in olive oil and sprinkle with Stevia, salt and pepper. Mix thoroughly.1 carrot, 1 apple, 1/2 onion, 1 tablespoon parsley, 2 tablespoons extra-virgin olive oil, 1-2 g Stevia, salt, dash of pepper
- Your surówka only takes ten minutes of prep time. Then refrigerate it for thirty minutes.
