I’m excited to share with you the newest addition to my soup recipe collection that’s been a total winner in our house – and it’s gluten-free, so everyone can dig in without worry!
Broccoli is the main ingredient in this soup. And let me tell you, making it is a breeze thanks to my trusty Vitamix – it’s like having a kitchen superhero! Simply simmer the veggies, blend half of the soup until smooth, and voilà – a creamy, hot soup ready in about 30 minutes!
Serving suggestions
Now, here’s where you can customize your soup. As is, the soup is dairy free, but if you can tolerate dairy top off your bowl with a sprinkle of cheese, adding that extra layer of indulgence. It’s like a warm hug!
And get this – you can serve it up however you like. Start your main dinner meal with a small bowl as a tasty appetizer, or go all-in and make it a light meal. Plus, the toppings? Endless possibilities! Think gluten-free croutons for a satisfying crunch or a sprinkle of fresh herbs for a pop of color and flavor.
Oh, and did I mention how versatile this soup is? Pair it with some crusty gluten free bread for a classic combo, or keep things low-carb with some low carb cheese crisps or a crisp salad on the side. It’s a delicious meal, no matter how you slice it!
If you’re in the mood for something more velvety and rich, my easy creamy broccoli cheddar soup is the answer. With its silky texture and vibrant flavor, it’s a guaranteed crowd-pleaser that’ll warm you up from the inside out.
