This healthy naturally gluten free frittata with ham comes together fast and is a great way to use up ham leftovers.
A frittata is an Italian style omelette that’s perfect for brunch, lunch, and even dinner. Rather than folding the egg over the filling, you’ll stir the eggs and ingredients together, and cook them slowly.
I cook all the ingredients in a cast-iron skillet that can be transferred to the oven and broiled. In no more than twenty minutes, we’re enjoying an easy and delicious meal.

Ingredients
- 2 tablespoons of extra-virgin olive oil
- 2 tablespoons of butter
- some chopped onion
- 6 large eggs
- a garlic clove
- 1/4 teaspoon of salt
- 1/4 teaspoon of pepper
- 1/4 cup of cream or milk
- 1/4 cup of parmesan cheese
- and 2 ounces of thin sliced ham cut into bite-size pieces

Heat oil and butter in your oven-safe skillet over a medium flame until it’s hot, but not smoking. Then add chopped onion and sauté until translucent, about 4 minutes.
Meanwhile, preheat your broiler on low.
Then whisk eggs, garlic, salt, pepper, milk, and parmesan cheese in a bowl. Then pour into your skillet and stir to distribute the onions evenly and add ham evenly over the top. Cover and cook until the egg is almost set, about 2 minutes.
Finally, uncover the skillet and place the skillet under the broiler about 7 inches from the heat source, until the top is golden brown and fluffy, about 4 minutes.
Garnish with fresh herbs and serve.
