Simple Creamy Lemon Posset Recipe

Treat yourself to a refreshing dish of zesty lemon posset, a simple creamy delight for any occasion! Only three ingredients and completely gluten free, egg free, and nut free.

When I checked the ingredients, I was thrilled to find out it’s completely gluten-free. I just had to try it, and let me tell you, it did not disappoint! It’s perfectly creamy and sweet with a delightful tang of lemon, truly a taste of summer in every bite.

Incredibly easy to make, it’s one of the most delicious desserts I’ve ever had. It tastes just like a gourmet treat from a high-end restaurant, making it perfect if you’re hosting a fancy dinner and want to wow your friends.

Serve it as a refreshing palate cleanser between courses or as a grand finale dessert!

Pair it with dishes like Gluten Free Sole Meunière or fast and flavorful Stir Fry Chicken With Baby Spinach And Mini Peppers. It’s the ideal finish to a light dinner recipe, offering a satisfying yet not overly filling dessert. 

From the first taste, I knew Lemon Posset would become one of the favorite gluten free dessert recipes in my house, and I’m sure it will in yours too.

Sometimes, the simplest cooking methods yield the most delightful results. This recipe requires only 15 minutes of hands-on time, but the real transformation occurs during chilling.

Posset might sound fancy, but it’s actually quite straightforward and absolutely delicious.

Originating from medieval times in Britain, it was originally a hot beverage consisting of sweetened, curdled milk blended with wine or ale, commonly served to alleviate colds or fevers.

Nowadays, it’s a chilled dessert that has stood the test of time for good reason. It’s rich, creamy, and packs a punch of citrus flavor.

Can I transform this into a Lemon Posset Brûlée?

Absolutely. Just before serving, sprinkle a bit of sugar on top of each posset and use a kitchen blow torch to brûlée the sugar. Then, chill the possets in the refrigerator for an additional five minutes.

Okay, let’s return to the kitchen to whip up our posset. It’s surprisingly easy to make, which is always a win in my book!

Ingredients

Sugar and Cream: These ingredients form the base of the posset, providing richness and sweetness. The cream (I like organic heavy whipping cream) contributes a smooth texture and a luxurious mouthfeel, while the sugar balances the tartness from the lemon juice.

When heated with the cream and sugar, the lemon juice causes a reaction that helps the mixture to thicken and set. This chemical reaction is essential for achieving the desired creamy consistency of the posset.

Lemon Zest: Grated from the lemon peel, the zest adds bright citrusy notes and intense flavor to the posset. It complements the lemon juice by providing aromatic oils that enhance the overall lemony profile of the dessert, making it more vibrant and flavorful.

Step 1. Zest your lemon

To prepare lemon zest, start by washing and scrubbing the lemon with a vegetable brush. Use a microplane to grate only the outer layer of the skin, making sure to rotate the lemon to extract just the zest and avoid the bitter white pith. If a microplane is not available, the small holes on a box grater can be used as an alternative. I wear cut-resistant gloves for added safety.

You’ll only need 5 tablespoons of juice from one or two lemons depending on their size. I do this by hand, but you could use a citrus juicer if you prefer.

In a medium saucepan, bring the heavy cream and granulated sugar to a boil over medium-high heat. Stir constantly until the sugar completely dissolves.

Once boiling, reduce the heat to simmer to maintain a gentle boil. Continue stirring constantly for about 3 minutes. Adjust the heat as needed to prevent the mixture from boiling over.

Keep stirring until the sugar dissolves and the mixture begins to thicken slightly.

Remove the saucepan from the heat and stir in the zest and lemon juice, without pits, so the flavors infuse into the creamy mixture. Let the mixture sit for about 10 minutes to cool slightly.

Stir the posset mixture again to ensure it’s well combined. Using a fine mesh strainer, filter out the lemon zest to ensure a smooth texture in the final dish. Now carefully pour or spoon the mixture (I use my ice cream scoop; it’s less messy) into six individual ramekins (or any 4-ounce dessert dishes) ensuring each one gets a generous portion.

Step 6: Chill to Set

Finally, cover each ramekin with plastic wrap or lids and transfer them to the refrigerator. Let them chill for at least 1 hour, or preferably overnight, until the possets are fully set.

Serve the lemon possets chilled and enjoy their creamy texture and bright lemon flavor.

  • Traditionally, lemon is used for its bright acidity, which balances the richness of the cream. However, you can experiment with other citrus fruits like lime or even orange to create different flavor profiles. Here’s my Orange Posset Recipe; the measurements are a bit different since oranges are larger and sweeter than lemons.
  • While classic posset is flavored with citrus, you can infuse it with vanilla, lavender, or even spices like cardamom or cinnamon for a unique twist.
  • Posset is delightful on its own, but you can garnish it with a sprig of mint, fresh berries or a fruit compote to add some contrasting flavors and textures.
  • Easily double or triple this recipe by using the slider in the recipe card.
  • Keep the possets in the refrigerator. They are best enjoyed within 2-3 days of making.

Simple Creamy Lemon Posset Recipe
